I share your lack-of-trust, and really regret my decision a while ago to consolidate my email accounts onto GMail.
I'm not clear either on exactly what and how much information about WiFi they're capable of harvesting, especially given that about 99% of the time, I'm either using my own in-house WiFi or someone else's (i.e., friends and family members, not public WiFi spots).
I have my iPod's mail app set to download mail using GMail's POP/IMAP/SMTP settings, not the actual GMail app; not sure if that makes any difference or not.
